Easy Apricot Chicken with Feta Salad

I wanted to create an easier alternative to feta and apricot stuffed chicken, without compromising on the taste. I came up with this quick and easy apricot chicken recipe that will give you a fresh and tasty dish, while keeping it healthy and clean – perfect for a summer evening when you’re not quite sure what to have. You only have to lightly season the chicken as the feta will offer the salty balance to the sweetness of the fruit and sauce.

Ingredients

2 Chicken breast
150g Dried apricots, diced
25g Feta Cheese
1 bag of Rocket
A good handful of lettuce
2 spring onions, thinly sliced
1 red pepper, finely diced

Method

Preheat your oven to 180°C (fan assisted).

Roll out a square sheet of foil and lay onto a baking tray. Please your chicken breast in the middle, place the apricots on and around and season lightly with salt. Now get take one side of the foil, and the opposite site, and bring up to meet each other. Pinch, and roll to make a tight seal. Next, fold over the two ends to create an air tight parcel. This will ensure the chicken steams in it’s own, and the apricot juices.

Place into the oven and bake for around 30-35 minutes, ensuring it is cooked throughout.

While your chicken bakes, place our salad into a bowl or onto a plate, and crumble over the feta cheese. Put to one side.

When the chicken has finished baking, carefuly (very carefuly!) open the parcel from the top, taking care not to rip the foil and lose all of your juices. Take out the chicken with a fork and thinly slice through the breast into 1cm strips and lay your chicken across the salad. Spoon over the apricot pieces from inside the foil onto your chicken. Then, make a small spout in the foil on one corner, and gently pour the apricot juices over the chicken to bring all of that flavour to your salad.

Garnish with a little bit of left over spring onion, and tuck in! If you like apricot chicken, you’re going to love this!
